Mi-so-ba

Decided to try something new and cooked up some Miso soba with Salmon fillets for dinner. It was pretty refreshing, so give it a try! It’s really simple and takes less than 30 mins to get it done.

What you’ll need:

Miso paste
Soya Sauce
Spring Onions
Shitake Mushrooms
Salmon Fillets
Daikon
Carrots
Sesame Oil
Lemon
Salt & Pepper
Parsley
Soba Noodles

Making the sauce for the soba:

– Mix in the miso paste with sesame oil, a squeeze of lemon juice and soya sauce.
– Chop up fresh parsley and mix it into the sauce
– Set aside in the fridge to drizzle over the soba later

Everything else: 

– Place the salmon fillets in the over and season with salt and pepper
– Rub the skin of the salmon with a bit of miso paste
– Boil the daikon, shitake and other vegetables you might want to add
– Cook the soba in a separate pot for 1-2 mins. Rinse with cold water after

Serving:

– Place noodles into bowl first, top it up with the boiled vegetables.
– Toss the soba in the miso sauce that was made earlier.
– Place in the baked salmon.
– Garnish with seaweed flakes, fresh cut parsley and drizzle with sesame oil!
