Almond Butter Udon

So Mich suggested to have this for dinner last night, and the first thing that came to my mind was, “whoa, we can eat mix almond butter and udon together??” Turned out really delicious and i gotta share it with you guys. We found a similar recipe online, but we tweaked it a little according to our own taste.

So for the dressing, mix all the above ingredients listed together. As for how much to use, go with how you’d like it to taste. If you want it to be more nutty, add more sesame oil than lime, if you want it to be slightly saltier than sweet, add more soy sauce. Also, it tastes really good when it’s spicy, so add in the chilli of your choice! Make sure you use unsweetened almond butter, if not it might be too sweet for noodles.

We boiled down some edamame peas and made semi hard boiled eggs to top the udon.

It was a good dinner, very clean and somewhat healthy.
